Process And Machinery Development For Production Of Sandesh – An Indian Dairy Product : Sandesh is one of the most popular heat-acid coagulated products in India. Chhana, an Indian counter part of soft cottage cheese, forms the base material for production of sandesh. Inspite of wide popularity, increased market demand and high profit margin, no attempt has so far been made to develop a process for mechanized production of sandesh. The traditional method of sandesh production is too rudimentary to meet the large-scale demand. The present study was undertaken to develop a time, energy and cost efficient process suitable for the mechanized production of sandesh. Heating and cooling rates of milk prior to acidification was studied for the production of chhana using bench scale devices. The study showed that increased heating and cooling rate increased the recovery in total milk solids in chhana from 0.523 to 0.611kg.kg milk solid-1. The increased recovery in total milk solids was due to the combined effect of increased recovery of fat, protein, lactose and ash content in chhana.
